  • 1 cup King Arthur gluten free pancake mix
  • A big scoop of unflavored whey protein
  • 1/2 teaspoon baking soda
  • 4oz container apple sauce
  • 1/2 cup of milk
  • 1 large egg
  • 1 tablespoon melted butter or coconut oil
  • 1/4 teaspoon vanilla
  • A big scoop of unflavored whey protein
  • A dash of nutmeg
  • A dash of cinnamon
  • Stevia to taste (optional)

Method:

  1. In a blender, combine the milk, egg, melted butter or coconut oil, vanilla extract, and apple sauce. Blend until the mixture is smooth.
  2. In a separate large bowl, mix together the King Arthur pancake mix, unflavored whey protein, baking soda, nutmeg, and cinnamon.
  3. Add dry ingredients to the blender and mix until smooth, let it rest as bubbles form in the batter. If it is to thick or thin add milk or additional pancake mix as needed.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or coconut oil.
  5. Pour 1/4 cup portions of the batter onto the skillet or griddle for each pancake. Cook until bubbles start to form on the surface, then flip and cook until the other side is golden brown.
  6. Serve the pancakes warm. You can add 100% pure maple syrup if desired, or use other toppings like fresh fruit or my favorite whipped cream.
